Environmental monitoring programs are critical to ensuring the safety of the food products you produce, and may be mandatory if you operate a Risk Management Programme (RMP). A good program will verify that you are successfully controlling microbiological food safety hazards, and help you to identify potential contamination sources before your food product becomes contaminated. You will typically want to test for indicator organisms and pathogens.
