Salmonella are pathogenic organisms of the family Enterobacteriaceae, and can lead to illnesses including typhoid fever and salmonellosis (food poisoning). Often located in the intestinal tracks of vertebrates, faecal shedding can lead to contamination, including soil, and crops. Once in food it can survive for extended periods.
Salmonella has been found in a wide variety of foods including eggs, poultry, raw meat, milk, fresh produce, and low-water foods such as spices and chocolate.
Cross-contamination during food handling, as well as inadequate temperature control or processing, can lead to salmonella contamination.
